Ingredients
1 and 1/2 cups warm water (100°F/38°C)
2 and 1/4 teaspoons yeast
1 tbsp sugar
1 tsp salt
1 tbsp unsalted butter, melted
3 3/4 – 4 cups all-purpose flour
1/2 cup baking soda
9 cups water
Coarse salt
Cheese sauce or mustard for dipping
Instructions
Mix water, yeast, and sugar. Rest 5 minutes until foamy.
Add salt, butter, and flour. Knead 5 minutes until soft.
Rest 10–30 minutes. Preheat oven to 400°F (204°C).
Roll into ropes and cut into bite-sized pieces.
Boil in baking soda bath for 10–15 seconds.
Place on tray, sprinkle with salt.
Bake 15 minutes until golden brown. Serve warm.
Notes
Brush with butter after baking for extra softness.
